Egg Sandwich

This recipe makes a warm, gooey egg sandwiched between two crunchy, buttery pieces of bread and all your favorite toppings! I can’t think of anything that would be better to start off your morning. I’ve always loved breakfast and thought of it as one of the best meals of the day. In the morning the entire day is filled with potential of all the exciting things that could happen. It’s the same with breakfast, you haven’t eaten anything yet but I feel that the first meal is important for setting the tone of the rest of the day. Besides, breakfast provides essential fuel to help your body carry you through the whole day. Though I’d eat this sandwich every day for breakfast if I could, I don’t discriminate either, and would happily enjoy it for lunch (dinner??) as well!

Egg Sandwich

Time: 15 minutes   Serves: 1


  • 2 slices of your favorite bread
  • ½ tbsp butter
  • 1 egg
  • 1 tomato
  • lettuce, to garnish
  • salt and pepper


  • Tomato and lettuce are optional, you can add other toppings like avocado, cheese, arugula, spinach, basil… basically whatever you have and whatever you like.

Bring your small fry pan to low heat. Butter your bread and place into the pan. When gently browned on one side, butter the side that is face up and flip. Once both sides are lightly browned remove and place aside. If you have a toaster (I don’t) you can just toast the bread instead.

In the same pan, add enough butter so that the bottom of the pan is well coated. Crack your egg directly into the pan, trying to keep it mostly to one side. Sprinkle a bit of salt and pepper on top of it. Cover with a lid. Keep an eye on the egg. I let mine cook only for about 3 minutes, until the whites are starting to get firm but the yolks are still runny.

While the egg is cooking, wash and cut your tomato into slices.

Place your tomato and lettuce onto the bread. Once egg is cooked, place on top.

Close sandwich and, if you like, cut in half. Caution, this will be very messy when the yolk breaks but is completely delicious and worth it. Serve with fresh fruit or breakfast potatoes.
